Marinated Olives & Capers

Green olives cracked and marinated in the traditional Cypriot way — brine, coriander seeds, and lemon — alongside wild capers harvested from the coastal cliffs near Akamas. The flavours develop over six months in earthenware crocks. Serve as meze with good bread and cold wine.
